Here's how serious Marble Slab is about ice cream:

It takes two days to prepare the in-store-made ice creams. A two-step freezing process hardens the ice cream to 20 degrees below zero before it's brought back to a serving temperature of 0 to 5 degrees. The marble slab used for combining ice cream flavors with the customer's choice of "mixins" (including fruit, nuts, candies and cookies) sits on a freezing table set at 28 to 30 degrees.
